Shatta, Lebanese Hot Sauce, Middle-eastern Sauce

A quick and appetizing Lebanese sauce that you can serve atop a salad, or as a dip with breads and starters . Chilli pepper is the main ingredient of the Shatta and gives it a nice fiery character, which is intensified by the pungency of garlic and herbs.
Shatta is really easy to make – all you need to do is blend the ingredients together in the given order. You can make a batch of this sauce, and store it in the refrigerator for using when required.

Makes 4 servings
1 cup hot chilli peppers , deseeded and broken into pieces
1/2 cup roughly chopped parsley
1 cup roughly chopped coriander (dhania)
1 1/2 tbsp roughly chopped garlic (lehsun)
1/2 tsp cumin seeds (jeera)
1/4 cup olive oil
1/2 tsp freshly ground black pepper (kalimirch)
salt to taste
- Method
- Blend the chilli peppers in a mixer to a smooth paste.
- Add the parsley, coriander, garlic, cumin seeds, pepper powder, olive oil, salt and blend the mixture till smooth.
- Store in air-tight container in the refrigerator and use as required.
