  1. To make {span class="bold1"}spinach puri{/span}, combine all the ingredients in a deep bowl and knead into a stiff dough using approx. 1/4 cup water.
  2. Divide the dough into 12 equal portions and roll out each portion of the dough into a 100 mm. (4 inch) diameter circle suing little oil for rolling.
  3. Heat the oil in a deep non-stick kadhai and deep-fry, a few puris at a time on a medium flame, till they turn golden brown in colour from all the sides. Drain on an absorbent paper.
  4. Serve the {span class="bold1"}spinach puri{/span} immediately.

  4. Add ½ tsp ginger garlic paste.

  6. Add ½ tsp carom seeds (ajwain).
  7. Add 1 tsp sesame seeds (til).
  8. Add ½ tsp coriander-cumin seeds (dhania-jeera) powder.
  9. Add salt to taste.
  10. Add ¼ cup water.
  11. Knead into a soft dough.
  12. Divide and roll the dough into 12 equal portions.

Palak puri.. an easy quick puri recipe.. great for breakfast.. it goes well with all the subzi.. the garlic paste and green chilli paste gives a nice flavour to the puri.. One can just have it plain..
