A popular chinese soup made with assorted vegetables in a vegetable stock with noodles. It is very easy to prepare and can be adapted according to your own taste.

Serves 4
2 tbsp oil
3/4 cup chopped mixed vegetables
1/4 grated sweet corn cob
4 cups clear vegetable stock
1 tsp soy sauce
1/2 tsp sugar
salt and to taste
2 tbsp cornflour mixed with 3/4 cup water
3/4 cup boiled noodles , cut into 50 mm. (2") length
chillies in vinegar and chilli sauce to serve
For The Garnish
2 tbsp finely chopped spring onions
1 tbsp finely chopped coriander (dhania)
Method
- Main procedure
- Heat the oil in a wok over a high flame, add the mixed vegetables and stir-fry for 1 minute.
- Add the corn, vegetable stock, soya sauce, sugar salt and pepper and bring to boil.
- Lower the flame, add the cornflour mixture and stir continuously till the soup thickens.
- Add the noodles and mix well.
- Garnish with spring onions and coriander and serve hot with chillies in vinegar and chilli sauce.
