A cool and refreshing salad that you will love to have with lunch on a hot summer’s day. The carrot raisin salad is also a pleasure to behold, with vibrant orange coloured carrots and orange slices freckled with deep black raisins. Enjoy the splash of colours and flavours in this tangy salad.
Carrot and Raisin Salad recipe - How to make Carrot and Raisin Salad

Makes 4 servings
1/4 cup raisins (kismis)
3/4 cup orange segments
1 1/2 cups grated carrot
1/4 cup mayonnaise
2 tbsp fresh cream
1/2 tsp lemon juice
1/2 tbsp powdered sugar
salt to taste

- Method
- Put the raisins in a bowl and pour boiling water over them. Leave for 10 minutes and drain. Keep aside.
- Combine the mayonnaise, fresh cream, lemon juice, sugar and salt in a bowl and mix well. Keep aside.
- Combine the carrots, raisins and oranges in a deep bowl. Pour the mayonnaise mixture, mix well and refrigerate for 1 hour.
- Serve chilled.
