Makes 1 to 2 bowls
1/4 cup broken noodles
1 tsp oil
1 tsp grated ginger (adrak)
1 tsp crushed garlic (lehsun)
2 slit green chillies green chilies
1/4 cup capsicum , chopped
1/4 cup carrot , thinly sliced
1/4 cup grated cabbage
1 cup chopped spring onions whites
1/4 cup chopped onions
1/4 tsp chilli powder
1 tsp szechuan sauce
1 tsp soy sauce
1 tsp vinegar
1 tbsp tomato ketchup
1 tsp freshly ground black pepper powder
a pinch of sugar
salt to taste
3 cups vegetable stock
Method
- Method
- Heat the oil in a broad non-stick pan and add the garlic, ginger and green chillies and saute for 30 seconds.
- Add the onions and spring onions and sauté until the onions turn light pink.
- Add the remaining vegetables and saute for 4 minutes on high flame.
- Add the schezuan sauce, pepper, soys sauce, vinegar, salt and sugar and saute for 2 minutes.
- Add the stock just enough to cover the vegetables and mix well.
- Add the tomato sauce and bring to boil.
- Add the noodles and cook for 4-5 minutes until the noodles are done.
- Garnish with spring onions greens and serve hot in individual bowls.
