Chinese Noodle Soup recipe - How to make Chinese Noodle Soup

Ingredients

1/4 cup broken noodles
1 tsp oil
1 tsp grated ginger (adrak)
1 tsp crushed garlic (lehsun)
2 slit green chillies green chilies
1/4 cup capsicum , chopped
1/4 cup carrot , thinly sliced
1/4 cup grated cabbage
1 cup chopped spring onions whites
1/4 cup chopped onions
1/4 tsp chilli powder
1 tsp szechuan sauce
1 tsp soy sauce
1 tsp vinegar
1 tbsp tomato ketchup
1 tsp freshly ground black pepper powder
a pinch of sugar
salt to taste
3 cups vegetable stock

Method
    Method
  1. Heat the oil in a broad non-stick pan and add the garlic, ginger and green chillies and saute for 30 seconds.
  2. Add the onions and spring onions and sauté until the onions turn light pink.
  3. Add the remaining vegetables and saute for 4 minutes on high flame.
  4. Add the schezuan sauce, pepper, soys sauce, vinegar, salt and sugar and saute for 2 minutes.
  5. Add the stock just enough to cover the vegetables and mix well.
  6. Add the tomato sauce and bring to boil.
  7. Add the noodles and cook for 4-5 minutes until the noodles are done.
  8. Garnish with spring onions greens and serve hot in individual bowls.
