how to make the batter

  1. To make double chocolate chip muffins recipe | chocolate chip muffins using eggs | Indian style double chocolate chip muffin | in a deep bowl, sieve 1¾ cups of plain flour (maida). Flour provides the structure for the muffins.
  2. Add ½ cup cocoa powder. Cocoa powder is the main ingredient that gives the muffins their rich chocolatey taste and deep brown color.
  3. Add 2 tsp baking powder. When baking powder gets mixed with wet ingredients, the acid and base react with each other. This reaction creates carbon dioxide gas bubbles. As the muffins bake in the oven, the heat expands the gas bubbles, causing the batter to rise and become fluffy.
  4. Add 1 tsp baking soda.
  5. Sieve it well.
  6. Add 1¼ cups castor sugar. Castor sugar dissolves quicker when creamed with butter or mixed into wet ingredients. This helps ensure even sweetness throughout the muffin and contributes to a smoother texture.
  7. Mix well and keep aside.
  8. In another deep bowl, add 1 cup milk. Milk adds moisture to the batter, which helps create a soft and fluffy crumb in the finished muffins.
  9. Add 1 whole egg. The protein in the egg white helps bind the dry ingredients together with the wet ingredients, creating a structured batter that holds its shape.
  10. Add ½ cup melted butter. Butter contributes a rich, buttery flavor that complements the chocolate in the muffins.
  11. Add 1 tsp vanilla extract. Vanilla extract complements the richness of the cocoa powder and butter (or oil) often used in these muffins. It creates a more balanced and complex flavor profile.
  12. Whisk well.
  13. Now gradually add the dry ingredients into the wet ingredients mixture.
  14. Gently whisk it to form a lump free batter.
  15. Add ¾ cup chocolate chips. They add bursts of chocolatey sweetness throughout the muffin. As they bake, the chocolate chips melt and disperse some of their cocoa flavor into the batter.
  16. Gently fold in using a spatula.
