Coconut and Vegetable Rice

Thai cuisine is known for its use of coconut milk, garlic and red chilli paste. Here is a rice preparation that combines rice and vegetables with precisely the same flavourful combination of ingredients. Lemon rind and basil are two unique ingredients used in this Coconut and Vegetable Rice to impart a distinct flavour that lingers in your taste buds for a long time.

Makes 4 servings
3/4 cup coconut milk (nariyal ka doodh)
1/4 cup diagonally cut and blanched french beans
1/4 cup boiled green peas
1/4 cup sliced and boiled baby corn
3 cups cooked long grained rice (basmati)
1/2 tsp cornflour
1 tbsp oil
1 tsp garlic (lehsun) paste
1 tbsp red chilli paste
1 tbsp finely chopped fresh basil
1/2 tsp lemon rind
salt to taste

- Method
- Dissolve the cornflour in the coconut milk and keep aside.
- Heat the oil in a broad non-stick pan, add the garlic paste and red chilli paste and sauté on a medium flame for 1 minute.
- Add the coconut milk-cornflour mixture, french beans, green peas, baby corn, basil,lemon rind and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Add the rice, mix well and cook on a medium flame for another 2 minutes, while stirring occasionally.
- Serve hot.
