Corn Mint Frankie recipe - How to make Corn Mint Frankie

Preparation Time:    Cooking Time:    Total Time:    Makes 4 frankies

Ingredients


For The Stuffing
2 tbsp oil
1 tsp cumin seeds (jeera)
1 tsp ginger (adrak) paste
1 tsp garlic (lehsun) paste
2 tsp green chilli paste
1 onion
1/4 cup grated carrot
1 cup boiled and crushed corn (makai ke dane) kernels
1/2 cup boiled and mashed potatoes
1/4 cup chopped spring onions
1/4 cup chopped coriander (dhania)
1/8 cup chopped mint leaves (phudina) leaves
1 tbsp garam masala
1 tbsp sugar
1 tbsp lemon juice
salt to taste

To Make The Roti
1/2 cup wheat (gehun) flour
1/2 cup plain flour (maida)
1 tsp oil
1 tbsp butter
1/4 cup mint leaves (phudina) paste
1/4 cup green coriander (dhania) paste
1 tsp cumin seeds (jeera) powder
water as required
salt to taste

Other Ingredients
1 finely chopped onion
frankie masala or chaat masala as required
butter to shallow fry

Method
For the stuffing

    For the stuffing
  1. Heat the oil in a pan,add cumin seeds to the oil.
  2. After seeds splutter, add ginger paste, garlic paste, green chilli paste to the oil.
  3. Then add onion and cook till it is translucent.
  4. Then add grated carrot and crushed corn kernels.
  5. Saute it for few minutes.
  6. Then add mashed potato, spring onions, coriander, mint leaves, garam masala, sugar, lime juice and salt to taste
  7. Saute the mixture for 2-3 minutes.
  8. Transfer it into a bowl and allow it to cool.

To make the roti

    To make the roti
  1. Combine the wheat flour, plain flour, oil, butter, mint paste, coriander paste, cumin seeds powder and salt in a bowl.
  2. Add water to it.
  3. Knead it into a smooth dough.
  4. Rest the dough for 30 minutes.
  5. Then divide the dough into four to five small balls.
  6. Roll rotis of the dough.
  7. Roast it on tava from both the sides.

How to proceed

  1. Take roti in a dish.
  2. Spread the above mentioned stuffing on it.
  3. Then spread chopped onion over the stuffing.
  4. Sprinkle some chaat masala or frankie masala over it.
  5. Roll it into a frankie.
  6. Heat the pan, add butter and roast frankie on tawa for a minute from both the sides.
  7. Serve hot with green chutney and tomato sauce.
