Every single ingredient – from the butter-cooked rotis to the tangy water, the crunchy onions and zesty Frankie masala – contributes to the flavour of the Mumbai style veg Frankie.

I would like to suggest to some tips to make the perfect veg Frankie recipe. 1. Mash the potatoes well with a potato masher or with your hands before you put them in a non stick pan. 2. It is advisable to use lightly cooked rotis with golden brown spots. Overcooked rotis will taste awful. 3. Wrap a tissue paper or aluminium foil around the frankie to seal it and to be able to hold it.

Ingredients


For The Rotis
1/2 cup plain flour (maida)
1/2 cup whole wheat flour (gehun ka atta)
1 1/2 tsp oil
salt to taste
1/4 tsp oil for kneading
2 tsp butter for cooking

For The Veg Frankie Stuffing
1 1/2 tbsp oil
1 tsp ginger-garlic (adrak-lehsun) paste
2 cups boiled , peeled and mashed potatoes
3/4 tsp chilli powder
1 tsp garam masala
1/2 tsp chaat masala
1 tbsp finely chopped coriander (dhania)
salt to taste

To Be Mixed Into Masala Water (makes Approx 1/4 Cup)
1 1/2 tsp dried mango powder (amchur)
1/2 tsp chilli powder
1/4 tsp garam masala
salt to taste
1/4 cup of water

Other Ingredients For Veg Frankie
4 tsp butter for cooking
1 cup finely chopped onions
2 tsp frankie masala or chaat masala

For Serving
tomato ketchup

Method
For the rotis

    For the rotis
  1. Combine plain flour, whole wheat flour, 1¼ tsp of oil and salt in a deep bowl and knead into a soft and pliable dough using enough water.
  2. Cover the dough with a wet muslin cloth and keep aside for 10 minutes.
  3. Knead again using remaining oil for 1 minute.
  4. Divide the dough into 4 equal portions.
  5. Roll out each into approx 200 mm. (8") diameter thin circle.
  6. Heat a tava (griddle) and cook each roti lightly on both side on a medium flame for 1 minute and keep aside.

  1. Heat the oil in a deep non-stick pan, add the ginger-garlic paste and sauté on a medium flame for a 30 seconds.
  2. Add the potatoes, chilli powder, garam masala, chaat masala, coriander and salt, mix well and sauté on a medium flame for 2 minutes. Keep aside.

How to proceed to make veg frankie

    How to proceed to make veg frankie
  1. To maake {span class="bold1"}veg frankie{/span}, place a roti on the tava (griddle) and cook on a medium flame using ½ tsp butter for 1 minute or till both sides turn light brown in colour. Keep aside.
  2. Heat ½ tsp butter on a tava (griddle), place ¼th of the stuffing and cook on a medium flame for 1 minute.
  3. Place the roti on a clean, dry surface, place the stuffing on one end of the roti, top with ¼ cup of onions, sprinkle 1½ tsp of masala water and ¼ tsp of chaat masala evenly over it.
  4. Roll it up tightly.
  5. Wrap the {span class="bold1"}veg frankie{/span} in an aluminium foil/tissue paper.
  6. Repeat steps 1 to 5 to make 3 more {span class="bold1"}veg frankies{/span}.
  7. Serve immediately with tomato sauce.

Variation:

    Variation:
  1. Cheese frankie: sprinkle 2 tbsp of grated processed cheese over the stuffing (at step no. 3 in the above recipe) and proceed as per the recipe.
  2. Schezuan frankie: simply smear 1½ tbsp of schezuan sauce, evenly on the roti (at step no. 3) and proceed as per the recipe.
  3. Paneer frankie: for the stuffing, replace ¾ cup of potatoes with ¾ cup of chopped paneer and proceed as per the recipe.
  4. Jain frankie: replace potatoes with equal quantities of raw banana for the stuffing and replace onions with equal quantities of cabbage in the recipe given above. You can add grated cheese over the stuffing to make it more flavourful.

    2. Add the ginger-garlic paste and sauté on a medium flame for 30 seconds.You can easily make the ginger-garlic paste at home.

    6. Add chaat masala for the desired tanginess.
    7. Add the coriander for a refreshing flavor and aftertaste.
    8. Add the salt to taste.

    Onion Masala Mixture for Veg Frankie:

    1. To make the Onion Masala Mixture for Veg Frankie, take a bowl and add the chopped onions into it.
    2. Add the chilli powder for the spice.
    3. Add the dried mango powder (amchur) to zing up the mixture.
    4. Finally, add the salt to taste.
    5. Mix all the ingredients well and keep the Onion Masala Mixture for Veg Frankie aside.

    Masala Water for Veg Frankie:

    1. To make Masala Water for Veg Frankie, take a small bowl and add the water into it.
    2. Add the chilli powder for the spice.
    3. Similarly, add the dried mango powder (amchur).
    4. Add the flavorfully rich garam masala.
    5. Finally, add the salt to taste.
    6. Mix well with the help of a spoon and keep aside Masala Water for Veg Frankie.

    Chillies in vinegar for Veg Frankie:

    1. To make Chillies in vinegar for Veg Frankie, take a bowl and add 1 tbsp of vinegar into it.
    2. Add 1 tsp finely chopped green chillies.
    3. Mix it up well and keep Chillies in vinegar for Veg Frankie aside.

    1. To make the Veg Frankie, place a roti on a clean dry surface. You can make the Rotis for Wraps and rolls easily at home. It is advisable to use lightly cooked rotis with golden brown spots. Overcooked rotis will taste awful.

    4. Spread 1 tsp of chillies in the vinegar evenly over it.

    6. Roll it up tightly to complete the Veg Frankie. Make sure that the stuffing doesn't fall off from the ends.

    8. Repeat the steps with the remaining ingredients to make 3 more Veg Frankie.

    Thks for this receipe, I hv tried it as some variation in Pattice by adding in potato,mutter,carrot,, capsicum,cheez and paneer with little poha and breadcrumbs..it was delicious by adding pudina coriander chutney and sauce on surface (base)of Frankie roti..it added the good flavour.     I liked it recipe but as we r living in village type area so here Frankie masala is not available here.so which ingredient should I use son behalf of it... please tell.....
