Crisp Aalu Parwal recipe - How to make Crisp Aalu Parwal

Makes 3 to 4 servings
250 gms snake gourd (padwal) , deseeded and cut into two
3 potatoes
4 tbsp mustard (rai / sarson) oil
1 tbsp cumin seeds (jeera)
a pinch of asofoetida
1 tbsp chilli powder
1 tbsp turmeric powder (haldi)
1 tbsp garam masala
1 tbsp coriander (dhania) seeds powder
1 tsp dried mango powder (amchur)
salt to taste
Method
- Method
- Heat oil in a pan and add the cumin seeds.
- When the seeds crackle, add the asafoetida and parwal and saute for 5 minutes.
- Add the potatoes and mix well, cover and cook for 2 minutes.
- Add all the powders and cook covered till potatoes are done.
- Serve hot with phulkas/roti or naan.
