Crunchy paneer pakoda is a popular crispy deep fried besan or gram flour coated paneer pakoda or fritter recipe. The pakodas make for a crunchy starter or cocktail snack recipe and is typically served with green mint chutney.

Ingredients


For Garlic Chutney
8 to 10 garlic (lehsun) cloves
1 tsp oil
1 tbsp chilli powder
salt to taste

To Be Mixed Together For The Batter
1 cup besan (bengal gram flour)
2 tsp ginger (adrak) paste
2 tsp garlic (lehsun) paste
1 tsp chilli powder
1/2 tsp turmeric powder (haldi)
a pinch of baking soda
salt to taste

Other Ingredients
250 gms paneer (cottage cheese)
oil for deep frying
1 cup boondi

  1. Heat the oil in a small pan, add the garlic and saute for 1 minute.
  2. Cool, add the chilli powder and salt and blend in a mixer till smooth, using little water. Keep aside.

  1. Wash and cut cottage cheese into 2"*1/2" sized batons.
  2. Slit each baton into half leaving one edge intact for filling.
  3. Crush the boondi with your hand and keep aside.
  4. Stuff the prepared garlic chutney into the slit of each cottage cheese baton.
  5. Heat the oil in a kadai, dip each baton of cottage cheese into the batter, roll in the crushed boondi and deep fry on medium heat till crisp and golden brown.
  6. Drain on an absorbent paper.
  7. Serve hot with a chutney of your choice.
