Dippy Cocktail Paneer recipe - How to make Dippy Cocktail Paneer

Makes 3 cups
2 cups crumbled paneer (cottage cheese)
4 tbsp olive oil
2 tbsp vinegar
2 tbsp honey
1/4 tsp dry dried oregano
salt to taste
2 quartered tomatoes
1/2 cup quartered onions
1/2 cup quartered capsicums
3 to 4 garlic (lehsun) cloves
1 chopped jalapeno pepper
1 tsp chilli flakes
1 tbsp lemon juice
4 tbsp finely chopped coriander (dhania)
Method
- Method
- Roast the tomatoes, onion, capsicum and garlic on a pan with olive oil till lightly charred.
- Remove from flame, cool and b;end in a mixer coarsely.
- Add the paneer and blend again till smooth.
- Transfer in a glass bowl, add the jalapeno pepper, chilli flakes, lemon juice, salt and coriander leaves, 2 tbsp olive oil, vinegar, honey, dried oregano, mix well and keep aside for 15 minutes.
- Serve as a dip.
