Doodhi ka halwa is a north indian sweet dish prepared from grated doodhi(also known as bottle gourd or lauki). The dudhi is cooked with sugar, ghee and spices like cardamom to create a tasty doodhi halwa. A delicious dessert dish which can be served as a snack or after meal sweet!

Makes 6 to 8 servings
3 cups grated bottle gourd (doodhi / lauki)
1 1/2 ltrs milk
400 to 500 gms sugar
2 tsp cardamom (elaichi) powder
a few saffron (kesar) strands
1 tbsp ghee
Method
- Method
- Put the milk and bottle gourd in a deep pan and bring to boil, while, stirring occasionally.
- When the mixture starts thickening, add the sugar, mix well and cook till the mixture becomes thick.
- Add the ghee, cardamom, saffron and colour, mix well and cook on a slow flame till the ghee leaves the sides.
- Serve hot garnished with nuts.
