Dudhi-dahi Kadhi

Dudhi dahi kadhi is a tasty savory dish prepared from boiled dudhi or bottle gourd. The healthy dudhi are stir fried with an array of dried spices simmered in curd based kadhi, garnished with chopped coriander leaves and served with plain rice and salad. 1 cup bottle gourd (doodhi / lauki) cubes
1 cup curds (dahi)
1 tsp mustard seeds ( rai / sarson)
7 to 8 curry leaves (kadi patta)
1 tsp fenugreek (methi) seeds
1 tsp turmeric powder (haldi)
3 to 4 whole dry kashmiri red chillies
1 tsp cumin seeds (jeera)
a pinch asafoetida (hing)
1 small ball jaggery (gur)
salt
2 tsp ghee
1/2 cup grated coconut
Method
- Pressure cook the dudhi upto 2 whistles.
- Grind coconut, jeera and red chillies to fine paste, leave aside.
- Whisk the curd to a smooth consistency.
- Heat a pan add paste of coconut-red chillies and stir well.
