Ellu Podi

Peep into any south indian larder, and you are likely to find a good stock of ‘podis’ or dry spice-dal blends that can be served as side dishes or even mixed with rice and served, for a simple main course meal. Here is a healthy powder made with sesame seeds that can be mixed with rice and til oil and served with papads, for a quick and tasty treat.

Makes 1 cup
2 tsp coconut oil or any other oil
1/2 cup sesame seeds (til)
1/2 cup grated dry coconut (kopra)
5 whole dry kashmiri red chillies , broken into pieces
1 tsp asafoetida (hing)
salt to taste

- Heat the oil in a small kadhai, add the sesame seeds, dry coconut, red chillies and asafoetida, mix well and sauté on a slow flame for 5 to 7 minutes, while stirring continuously. Keep aside.
- When cool, transfer the mixture into a mixer jar, add salt and blend to a coarse powder.
- Store in an air-tight container and use as required.
