A spinach based soup with sweet corn, flavoured with fresh basil.

Makes 1 serving
40 gms white corn (makai ke dane) kernels
80 gms spinach (palak) paste
200 gms sweet corn kernels (makai ke dane)
salt and freshly ground black pepper powder to taste
30 gms chopped basil
2 tbsp fresh cream
4 cups vegetable stock
Method
- Method
- Add the stock in a deep pan and add the sweet corn and mix well.
- Add the salt, pepper and basil, mix well and bring to a boil.
- Add the spinach and remove from the flame.
- Add the white corn.
- Serve hot garnished with fresh cream.
