Tastes great when fresh home-made paneer is used. You can serve the herb paneeri on toasted bread or baked papdi to make a quick snack.

Makes 4 servings
1 cup grated paneer (cottage cheese)
1/2 cup chopped onions
1/4 cup chopped capsicum
1/2 tsp finely chopped ginger (adrak)
1/2 tsp finely chopped garlic (lehsun)
1 1/2 tsp finely chopped green chillies
a pinch of turmeric powder (haldi)
a pinch of black salt (sanchal)
2 tbsp chopped coriander (dhania)
2 tbsp chopped mint leaves (phudina)
1 tsp lemon juice
1 tsp oil
salt to taste
To Serve
15 to 20 baked papadis
For The Garnish
2 tbsp chopped coriander (dhania)
Method
- Main procedure
- In an microwave safe bowl combine the oil, onions, ginger, garlic together and mix well. Microwave on high for 4 minutes.
- Add the capsicum, green chillies, turmeric powder and black salt and microwave on high for 2 minutes.
- Add the paneer, coriander, mint, lemon juice and salt and mix well.
- Serve the herb paneer topped on baked papdis or toasted bread slices, garnished with chopped coriander.
