Makes 15 mini pancakes.
For Jaggery Pancakes
2 tbsp grated jaggery (gur)
1/2 cup rice flour (chawal ka atta)
1/4 tsp green chilli paste
salt to taste
oil for greasing and cooking

- To make {span class="bold1"}jaggery pancakes{/span}, we will first heat water in a pan, add jaggery, boil and stir to make jaggery water.
- Make a batter by putting rice flour and jaggery water in a bowl. Whisk well to break all lumps.
- Add green chilli paste, salt and mix well.
- Heat a non-stick mini uttapam pan and grease it with little oil. Pour a spoonful of batter in each uttapa mould to make a 75 mm. (3") diameter round.
- Cook on a medium flame on one side for 30 seconds and brush the top with oil. Flip over and cook the other side the same way. Cook till they turn golden brown in colour from both sides.
- Serve {span class="bold1"}jaggery pancakes{/span} immediately.

In a deep bowl put 1/2 cup rice flour (chawal ka atta). You could replace with whole wheat flour to make it healthier.

In a small pan heat 1 cup water.

Add 2 tbsp grated jaggery (gur). Note that jagerry melts easily in hot water.

Bring to a boil while stirring continuously. The jaggey will melt easily.
