Makes 2 servings
2 cups mushrooms (khumbh) , cut into quarters
1 large tomato
1 tsp oil
1/3 cup grated onions
2 tsp ginger-garlic (adrak-lehsun) paste
1/4 tsp garam masala
1/2 tsp chilli powder
1/2 tsp coriander-cumin seeds (dhania-jeera) powder
1/2 tsp dried fenugreek leaves (kasuri methi)
1 tbsp fresh cream
salt to taste
For The Garnish
2 tbsp chopped coriander (dhania)
- Method
- Place the tomato in a microwave safe bowl and microwave on high for 2 minutes.
- Cool slightly, peel and blend in a mixer till smooth. Keep aside.
- Combine the oil, onions and ginger-garlic paste in a microwave safe bowl, mix well and microwave on high for 1 minute.
- Add the tomato pulp, mix well and microwave on high for 2 minutes.
- Add all the other ingredients, mix well and microwave on high for 5 minutes, while stirring twice in between.
- Serve hot garnished with coriander.

Kadhai khumb ki subzi..the spices added in the subzi is just too aromatic.. it spices coats the mushroom very well.. I have loved the taste with roti.. I made made this on a sunday.. and everybody just loved this subzi..
