Makai ka Halwa

Here is a unique halwa made of grated sweet corn sweetened with sugar and flavoured with spices like cardamom and saffron. Milk gives the Makai ka Halwa a very rich flavour while grated coconut improves the mouth-feel.
Although it is a unique recipe, it still has a traditional touch to it. This makes the halwa appealing to both the younger and older generations! Serve it at a party and watch the compliments pile up.
Makai ka Halwa recipe - How to make Makai ka Halwa

Makes 4 servings
2 tbsp ghee
1 cup grated sweet corn cob
1 cup milk
1/2 cup sugar
2 tbsp freshly grated coconut
1/4 tsp cardamom (elaichi) powder
a pinch of saffron (kesar) strands
1/4 cup chopped mixed nuts (cashewnuts and pistachios)
- Method
- Heat the ghee in a deep non-stick pan, add the sweet corn, mix well and cook on a medium flame for 10 minutes, while stirring continuously.
- Add the milk and sugar, mix well and cook on a medium flame for 6 minutes, while stirring continuously.
- Add the coconut, cardamom powder and saffron, mix well and cook on a medium flame for 4 minutes or till it leaves the sides of the pan, while stirring continuously.
- Switch off the flame, add the nuts and mix well.
- Serve hot.
