Marinated Bell Pepper Open Burger

Colourful and crunchy bell peppers marinated in herbed olive oil decorate crispy burger buns together with a homemade parsley cream cheese. The Marinated Bell Peppers Open Burger reminds one of the good old farm days, with its creamy and herby topping interspersed with fresh juicy bell peppers. It is the perfect choice for a garden party, or just about any day for that matter.

Makes 4 open burgers
2 burger buns
butter for spreading
To Be Mixed Together For The Parsley Cream Cheese
2 tbsp finely chopped parsley
1/2 cup mayonnaise
3/4 cup grated fresh paneer
2 tbsp finely chopped onions
2 tbsp milk
1 tsp dry red chilli flakes (paprika)
1 tsp grated garlic (lehsun)
1/2 tsp lemon juice
salt to taste
To Be Mixed Together For The Marinated Peppers
1/4 cup sliced yellow capsicum
1/4 cup sliced green capsicum
1/4 cup sliced red capsicum
1 1/2 tbsp olive oil
1 tsp dry red chilli flakes (paprika)
1 tsp dried mixed herbs
salt to taste
1/4 tsp freshly ground black pepper (kalimirch)
1/2 tsp lemon juice
For The Garnish
4 parsley sprigs
- Method
- Divide the parsley cream cheese mixture into 4 equal portions. Keep aside.
- Divide the marinated peppers mixture into 4 equal portions. Keep aside to marinate for 10 to 15 minutes.
- Cut each burger horizontally into 2 equal halves.
- Apply a little butter on all the bun halves and bake in a pre-heated oven at 200°c (400°f) for 8 to 10 minutes.
- Place the baked bun halves on a clean, dry surface with the buttered side facing up.
- Spread a portion of the prepared parsley cream cheese over each bun halve.
- Finally top with a portion of the prepared marinated pepper.
- Serve immediately garnished with a parsley sprig.

I love peppers and loved the idea of using them in a sandwich. tastes lovely! Loved the cheese and parsley that add so much texture to the dish!
