Masaledar Arbi recipe - How to make Masaledar Arbi

Ingredients


For Masaledar Arbi
1 1/2 cups boiled and peeled colocasia (arbi) roundels
1 tsp ginger-garlic (adrak-lehsun) paste
1/2 tsp finely chopped green chillies
1/2 tsp lemon juice
1/2 tsp carom seeds (ajwain)
1 tsp oil
2 tbsp milk
1 tbsp fresh cream
salt to taste

To Be Mixed Into A Masala-curd Mixture
2 tbsp thick curds (dahi)
1 tsp besan (bengal gram flour)
2 tsp chopped coriander (dhania)
1/2 tsp chilli powder
1/2 tsp garam masala
1/4 tsp dried mango powder (amchur)

For The Garnish
2 tsp chopped coriander (dhania)

Method

  1. To make {span class="bold1"}masaledar arbi ki sabzi{/span} first clean and cook the arbi in a pressure cooker for 2 whistles.
  2. Prepare the masala curd mixture by mixing together curd, besan, coriander, chilli powder, garam masala and amchur powder.
  3. Heat the oil in a non stick pan. Add carom seeds (ajwain) and cook for a few seconds.
  4. Add ginger garlic paste, green chillies and cook for a few seconds.
  5. Add masala curd mixture and cook for 1 minute.
  6. Add cooked arbi, milk, fresh cream, salt and cook for 3 to 4 minutes on medium heat.
  7. Add lemon juice and cook again for 1 minute. Garnish with coriander.
  8. Serve {span class="bold1"}masaledar arbi ki sabzi{/span} hot with bajra or jowar roti.

  1. Botanically speaking, the taro "root" is really a corm, a thickened, underground stem of certain plants, resembling bulbs. The smaller taro, or eddo, is popular in the Indian sub continent.

how to cook arbi

  1. Put the arbi in a deep bowl of water and clean it. There is lots of dirt on the arbi and will require 4 to 5 water changes to clean it.
  2. Arbi is cleaned.
  3. Drain.
  4. Put the cleaned arbi in a pressure cooker and cover with enough water.
  5. Pressure cook for 2 whistles.
  6. Allow the steam to escape before opening the lid. Arbi after cooking.
  7. Drain.
  8. Peel the arbi with your fingers.
  9. Cut arbi ino slices.

  1. In a bowl put 2 tbsp thick curds (dahi).
  2. Add 1 tsp besan (bengal gram flour).

  6. Add 1/4 tsp dried mango powder (amchur).
  7. Mix well.

  1. To make masaledar arbi ki sabzi recipe | Punjabi sookhi masaledar arbi ki sabji | Ghuiya ki masaledar sabzi | spicy colocasia Indian vegetable | heat 1 tbsp coocnut oil or oil in a broad non-stick pan. Use coconut oil for a healthier diet. 
  2. Add 1/2 tsp carom seeds (ajwain).
  3. Cook on medium heat for a few seconds.
  4. Add 1 tsp ginger-garlic (adrak-lehsun) paste.

  10. Add 2 tbsp milk.
  11. Add 1 tbsp fresh cream.
  12. Add salt to taste. We added 1/4th tsp salt. 
  13. Mix gently.

  15. Add 1/2 tsp lemon juice.

  1. Combine the oil, ginger-garlic paste, green chillies, lemon juice and carom seeds in a microwave-proof bowl and microwave on high for 1 minute.

What if we don''t want to microwave but make it as a normal one .. Pls share

   Hi Ruchika, If you do not want to cook it in a microwave then you can first pressure cook the arbi and then cook it on a gas range.

The colocassia available needs 15 min of microwave to cook properly . Wouldn''t it be better to boil the colocassia before cooking with the masala.

recipe turned out very well.but was a little dry. tobe had with chapatis one can add it to the oniontomato mix.
