This is also known as man chow soup at many popular eateries. An all time favourite, this soup is an ideal starter to any meal. The flavours of ginger and garlic merge beautifully with the fresh flavour of herbs like coriander and mint in this soya sauce based soup.

Makes 4 servings
4 1/2 cups clear vegetable stock
2 tbsp finely chopped tomatoes
2 tbsp finely chopped capsicum
2 tbsp finely chopped cauliflower
2 tbsp finely chopped carrots
2 tbsp finely chopped cabbage
2 tsp finely chopped garlic (lehsun)
2 tsp chopped ginger (adrak)
1 tbsp fresh mint leaves (phudina) , finely chopped
1 tbsp chopped coriander (dhania)
3 tsp soy sauce
2 cornflour mixed in 1/2 cup water
1 tbsp oil
salt and freshly ground black pepper powder to taste
For The Garnish
1 tbsp chilli oil
1 tbsp chopped coriander (dhania)
Method
- Main procedure
- Heat the oil in a wok over a high flame. Add the garlic, ginger, vegetables and stir fry for 2 to 3 minutes over a high flame.
- Add the stock, mint, coriander, soya sauce and salt and pepper.
- Add the cornflour paste to the soup and boil for 1 minute.
- Serve hot garnished with chilli oil and coriander.
