To make methi ghavan, combine all the ingredients in a deep bowl along 2 cups of water to make a batter of pouring consistency. Heat a non-stick tava (griddle) on a medium flame, grease it lightly using a little oil. Pour a ladleful of batter on the tava (griddle) and spread evenly into a 125mm. (5”) diameter circle. Cook the ghavan using a little oil, till it turns golden brown in colour from both the sides. Repeat with the remaining batter to make more 11 ghavans. Serve immediately.

For Methi Ghavan
1 cup rice flour (chawal ka atta)
1/4 cup finely chopped fenugreek (methi) leaves
1 tsp finely chopped green chillies
1/2 tsp grated ginger (adrak)
1 tsp cumin seeds (jeera)
1/4 tsp turmeric powder (haldi)
1 tsp oil
salt to taste

To make methi ghavan recipe | fenugreek rice dosa | ghavane | Maharashtrian ghavan Indian snack, we first need rice flour. Rice flour is made by grinding rice into a fine powder. While buying rice flour check that it should be white in colour and free flowing (free of lumps).

Next we need fenugreek leaves. Always select bunches that are fresh and green in colour. Avoid if they are yellow or very dry textured. Methi leaves are low in calorie, powerful antioxidant and cures mouth ulcers. Fenugreek leaves help in improving glucose and insulin responses, hence good for diabetics. They are good source of iron.

Wash methi leaves and chop them on a chopping board.

Add chopped methi leaves to the rice flour.

Add finely chopped green chillies.

Add grated ginger also.

Add cumin seeds for added flavour.

Mix well to make a batter of pouring consistency.

Then to make fenugreek rice dosa, heat a non-stick tava (griddle) on a medium flame.

Pour a ladleful of batter on the tava (griddle) to make a 125 mm. (5”) diameter circle. You will notice that the batter spreads almost on its own. If necessary spread little to even it out.

Spread a little oil on the ghavane and let it cook on one side till it turns golden brown in colour.

Turnover and cook on the other side till it turns golden brown in colour.
