Mixed Veg and Tomato Dip

Makes 6 servings
2 cups boiled mixed vegetables
1/2 cup chopped tomatoes
2 tbsp butter
1 tsp finely chopped green chillies
1 tsp finely chopped garlic (lehsun)
1/2 tsp finely chopped ginger (adrak)
1/4 cup chopped onions
1/2 cup chopped spring onions whites and greens
1 tsp chilli powder
1 tsp sugar
salt to taste
1/4 cup tomato ketchup
2 tbsp finely chopped coriander (dhania)
For Serving

- Method
- Heat the butter in a broad non-stick pan, add the green chillies, garlic, ginger and onions and sauté on a medium flame for 2 minutes.
- Add the tomatoes, spring onions, chilli powder, sugar and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Add all the vegetables and ¼ cup of water, mix well and cook on a medium flame for 5 minutes, while stirring occasionally.
- Switch off the flame, add the coriander, mix well and serve immediately with potato wafers.

What an innovative dip ! Best way to make my kids have vegetables in the form of dip.Really tasty and served it with wafers and nacho strips. Kids just gobbled it up.
