3 cups sliced mushrooms (khumbh)
2 tbsp oil
1 cinnamon (dalchini) stick
1 black cardamom (badi elaichi)
1 tsp cumin seeds (jeera)
1 green chilli , slit
1 cup finely chopped onions
2 tsp ginger-garlic (adrak-lehsun) paste
1/2 cup tomato pulp
2 tbsp whisked curds (dahi)
1/2 tsp turmeric powder (haldi)
1/2 tsp chilli powder
2 tsp coriander-cumin seeds (dhania-jeera) powder
1 tsp kashmiri red chilli powder
1/2 tsp garam masala
2 tbsp powdered cashew nut (kaju)
salt and to taste
1 tsp dried fenugreek leaves (kasuri methi)
1 tbsp finely chopped coriander (dhania)
For mushroom masala

- Sauté on a medium flame for 2 to 3 minutes. Add ginger-garlic paste and sauté for a minute.
- Add tomato pulp, curd, turmeric powder, chilli powder, coriander cumin seeds powder, kashmiri chilli powder, garam masala and powdered cashew nut.
- Mix well and cover and cook on a medium flame for 3 to 4 minutes until the oil is released.
- Add the sautéed mushrooms, salt to taste and ½ cup hot water. Mix well.
- Cover and cook on a medium flame for 8 minutes, while stirring occasionally.
