Ingredients

1/2 cup semolina (rava)
1/2 cup sugar
1/2 cup milk
1 tbsp mava (khoya) / evaporated milk
1 tbsp raisins (kismis)
1 tbsp cashewnuts (kaju)
1 tbsp butter (unsalted)
1 tbsp ghee
a pinch of cardamom (elaichi) powder
1 1/2 cups water
1 tbsp butterscotch granules
1/2 tsp vanilla essence

Method
    Method
  1. Heat 1 tbsp of ghee in a pan. Add sooji and fry on low flame till it becomes fragrant and start changing its color.
  2. Add sugar and continue heating with constant stirring till the sugar caramelizes. It will start leaving oil.
  3. Add raisins, cashewnuts, khoya and milk. It will look as if crystallizing, but don’t worry. Keep on stirring continuously.
  4. Add water and continue cooking. When it starts boiling, reduce the flame. Add ghee and butter and let it simmer till halwa starts coming together. At this point it will leave ghee again.
  5. Add cardamom powder, coarsely crushed butterscotch granules and vanilla essence.
  6. Garnish with dry fruits and butterscotch granules and serve hot.
