This paratha does not need any elaborate side dish. . . Goes very well with raitha or salad or simply plain curds.

Makes 4 parathas
2 cups whole wheat flour (gehun ka atta)
1/2 cup cooked toovar (arhar) dal
1/4 cup grated tofu
1 tbsp oil
1 tbsp sugar
salt to taste
6 tbsp dried fenugreek leaves (kasuri methi) , soaked in hot water for 10 minutes and drained
1/2 tsp asafoetida (hing)
1/2 tsp turmeric powder (haldi)
1/2 tsp cumin seeds (jeera) powder
1/2 tsp coriander (dhania) powder
1/2 tsp red chilli powder
1/2 tsp dried mango powder (amchur)
1/8 cup finely chopped coriander (dhania)
oil for cooking
Method
- Method
- Combine all ingredients and knead to a smooth dough, using enough warm water.
- Cover and keep aside for 30 minutes.
- Divide the dough into 4 equal portions and roll out each portion into a circle of 6" diameter, using the flour for rolling.
- Heat a tava and cook each paratha, using little oil, till golden brown spots appear on both the sides.
- Serve hot.
