Makes 2 servings
1 cup long grained rice (basmati)
1 tbsp ghee
1 small stick of cinnamon (dalchini)
1 tsp cumin seeds (jeera)
a pinch of asafoetida (hing)
3 garlic (lehsun) cloves , chopped
1/4 cup green peas
1/4 cup chopped carrots
1 onion , sliced
1/4 cup chopped beetroot
1/2 cup soaked and chopped soya nuggets
chilli powder to taste
turmeric powder (haldi) to taste
1/2 tsp pulao masala
chopped coriander (dhania) for garnishing
Method
- Method
- Wash the rice and soak in enough water for 15 minutes.
- Heat the ghee in a pressure cooker, add the cinnamon, cumin seeds, asafoetida and garlic, mix well and saute till the seeds crackle.
- Add the onions and saute till onions turn golden brown in colour.
- Add the remaining ingredients along with 2 cups of water and mix well.
- Pressure cook for 2 to 3 whistles, or till the rice is cooked.
- Allow the steam to escape before opening the lid and seperate each grain using a fork.
- Serve hot.
