Roasted Pumpkin Soup recipe - How to make Roasted Pumpkin Soup

Makes 1 serving
250 gms pumpkin , chopped
4 tomatoes , chopped
2 capsicum , chopped
1 tsp freshly ground black pepper powder
2 green chillies , chopped
1 onion , sliced
4 garlic (lehsun) cloves , chopped
50 gms butter
salt to taste
1 cup grated paneer (cottage cheese)
2 tbsp fresh cream
1 tsp chopped parsley
1 tsp lemon juice
Method
- Method
- Place the vegetables in a baking dish and bake in a pre-heated oven for 10 minutes on 180 degree Celsius.
- Cool and blend the vegetables into a smooth puree.
- Heat the butter in a deep pan, add the puree and saute for 5 minutes.
- Add the pepper and salt and mix well.
- Add little water, mix well and bring to boil.
- Serve hot garnished with grated paneer,parsley and lemon juice.
