Everyone of you might have heard of the very famous Maharashtrian snack "Usal", here we have given it a twist by transforming it into a chaat. sev usal is a very famous Gujarat street food from Vadodara. Chaat are popular savoury snack around India. sev usal chaat is made using assortments of chutneys, spices, crunchy bites like papdi, sev, tikkis, boond, puri. If you have guests coming over, you can win them with this recipe. Easy to make sev usal, all you need to do is prepare everything before hand toss everything while serving and serve immediately.
Sev usal chaat is a unimaginably scrumptious treat and has a vibrant burst of flavors. The procedure of making sev usal is divided into two steps. First is making the ragda and second is assembling it. For making ragda, we have taken soaked white peas over night and cooked them in pressure cooker. Make sure that you do not over cook them or the sev usal chaat might be mushy, we need the white peas to give a mouth fill. Once the white peas are cooked, drain them and make the tempering. Take oil in a deep non stick pan, add mustard seeds and asafoetida, this spice also known as hing helps in digestion; as pulses and dals are hard to digest. Add onions and tomatoes, you can also use tomato puree if you wish to. Once these are cooked, add Indian spices like red chilli powder, turmeric powder, coriander powder, salt and little water and cook. Add cooked vatana, corainder leaves which add freshness and lemon juice for a tangy hint. Add water, make sure you do not add excessive water as we do not want our radga to be runny. And our ragda for sev usal is ready. You can use this ragda for various other chaats too.
After the ragda is prepared, the next step is assembling it. So to assemble it, take a little portion of ragda in a bowl. Top it with little garlic chutney, green chutney and meetha chutney. You can adjust he quantity of chutneys according to your preference of sweet or spicy. To add nice bite to the sev usal add boiled and chopped potatoes and onions, add coriander leaves and lastly add sev. Our Gujarat street food sev usal is ready to be served!!

Sev Usal recipe - How to make Sev Usal

Makes 4 servings
For The Ragda
2 cups soaked safed vatana (dried white peas)
salt to taste
1 1/2 tbsp oil
1 tsp mustard seeds ( rai / sarson)
1/4 tsp asafoetida (hing)
1/4 cup finely chopped onions
1/4 cup finely chopped tomatoes
1 1/2 tsp chilli powder
1/2 tsp coriander (dhania) powder
1/2 tsp turmeric powder (haldi)
2 tbsp finely chopped coriander (dhania)
1 tsp lemon juice
For The Sev Usal Topping
2 tsp garlic chutney
4 tsp green chutney
8 tsp sweet chutney
4 tbsp boiled and chopped potatoes
4 tbsp finely chopped onions
2 tbsp grated carrot
2 tbsp finely chopped coriander (dhania)
4 tbsp sev
For Serving With Sev Usal

- Combine the vatana, little salt and enough water in a pressure cooker, mix well and pressure cook for 3 whistles.
- Allow the steam to escape before opening the lid. Drain and keep aside.
- Heat the oil in a deep non-stick pan, add the mustard seeds and asafoetida and sauté on a medium flame for 30 seconds.
- Add the onions and sauté on a medium flame for 1 minute.
- Add the tomatoes, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Add the chilli powder, coriander powder, turmeric powder, salt and ½ cup of water, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Add the cooked vatana, coriander, lemon juice and ½ cup water, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. Keep aside.

- Put 1/4th portion of ragda in a serving bowl and top it with ½ tsp of garlic chutney, 1 tsp of green chutney, 2 tsp of sweet chutney evenly over it.
- Put 1 tbsp of potatoes, 1 tbsp of onions, ½ tbsp of carrot, ½ tbsp of coriander and 1 tbsp of sev evenly over it.
- Repeat steps 1 to 2 to make 3 more servings.
- Serve the {span class="bold1"}sev usal{/span} immediately.

Recipe notes for Sev Usal
- The ragda must have a thick flowy consistency and it should not be watery at all. You can prepare ragda in advance and heat it again at the time of serving.

For the ragda
- To prepare ragda for sev usal, wash the white peas very well.

After soaking, the peas will look like this.

For preparing the ragda, drain the peas using a strainer and discard the water.

Put the soaked and drained peas in a pressure cooker.

Add approximately 3 cups of water
- Pressure cook for 3 whistles or until the peas are soft. It is very important for the peas to be soft for the sev usal recipe to ensure it is properly enjoyed by all.

Allow all the steam to escape before opening the lid. This is called the natural release method and is done by removing the pressure cooker from the hot burner and let the pressure drop by cooling down naturally.

Drain and keep aside.

Heat the oil in a deep non-stick pan.

Once the oil is hot, add mustard seeds.

Add asafoetida and sauté on a medium flame for 30 seconds.

Add the onions and sauté on a medium flame for 1 minute.

Add the tomatoes. Alternatively, you can even use tomato puree.

Mix well and cook on a medium flame for 2 minutes, while stirring occasionally.

Add chilli powder. The quantity can be adjusted as per the spice you can handle.

Add turmeric powder.

Add coriander powder.

Add salt and ½ cup of water.

Add the cooked vatana.

Add lemon juice for a nice tangy hint.

Add ½ cup water. Add more or less as per the consistency you would like.

Mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. Keep aside.
- Our ragda is ready to prepare sev usal. You can even use this ragda to make ragda samosa, ragda pani puri or ragda pattice.
How to make Sev Usal

To assemble sev usal, put 1/4th portion of ragda in a serving bowl.

Top it with ½ tsp of garlic chutney.

Drizzle 1 tsp of green chutney.

Also, drizzle 2 tsp of sweet chutney evenly over it. The quantity of all the chutneys can be adjusted to suit your taste buds.

Put 1 tbsp of potatoes.

Sprinkle 1 tbsp of onions. They add a nice bite to the sev usal.

Sprinkle ½ tbsp of coriander.
