Ingredients


For Soya Khakhra
1/2 cup soy flour
1/4 cup whole wheat flour (gehun ka atta)
2 tsp black sesame seeds (kala til)
1 tsp oil
salt to taste

3 tsp oil for cooking

Method

  1. To make {span class="bold1"}soya khakhra{/span}, combine all the ingredients in a bowl and knead into a firm dough using little water.
  2. Knead the dough well again and divide it into 6 equal portions.
  3. Roll out each portion into a 150 mm. (6") diameter thin circle, using a little wheat flour for rolling.
  4. Heat a non-stick tava (griddle) and cook each khakhra on a slow flame till brown spots appear on both the sides.
  5. Grease the khakhra with 1/4 tsp oil on each side and continue cooking it on a slow flame, while pressing with a folded muslin cloth or a khakhra press, till it turns crisp and golden brown from both the sides.   4. Add salt to taste. We added 1/4 tsp salt.
  5. Add 1 tsp oil.
  6. Gradullay add enough water to make a firm dough. We added 3 tablespoons water.
  7. Knead into a firm dough.

  2. Sprinkle a little whole wheat flour (gehun ka atta)  on the rolling surface. Flatten the dough between your palms and place on rolling board and top with flour.   
  3. Roll out each portion into a 150 mm. (6") diameter thin circle, using a little wheat flour for rolling.
  4. Heat a non-stick tava (griddle).
  5. Place the rolled dough on the hot tava.
  6. Cook khakhra on a slow flame for 30 to 45 seconds till blisters (bubbles ) appear. 
  7. Brush both sides of the khakhra with oil.
  8. Cook the khakhra by using a khakra press and pressing down on all the sides of the khakhra to get even cooking.
  9. Keep cooking till brown spots appear on both the sides. Your soya khakhra is ready.
  10. Cool and serve soya khakhra | Indian soya sesame khakhra | whole wheat soya til khakhra |.
