These tasty spring rolls are packed with the goodness of vegetables. They contain a lot of ingredients and are a little tedious to make but definitely worth the effort.

Ingredients


For The Stuffing
1 tbsp oil
1/2 cup chopped spring onions whites
1 1/2 cups shredded vegetables (french beans , cabbages and carrots) ,
1/2 cup boiled noodles , cut into 1" pieces
2 tsp soy sauce
salt to taste
1/2 cup chopped spring onion greens

Other Ingredients
12 readymade wonton wrappers
3 tbsp plain flour (maida) mixed with 1/4 cup of water
oil for deep-frying
chilli-garlic sauce to serve

Method

  1. Heat the oil in a wok over a high flame, add the spring onion whites, mixed vegetables, bean sprouts and stir-fry over a high flame for 3 to 4 minutes.
  2. Add the noodles, soya sauce and salt and cook for 2 more minutes. Cool and keep aside. Switch off the flame, add the spring onion greens and mix well.

  1. Place one spring roll wrapper on a dry surface and spoon a little of the stuffing mixture on one end of the wrapper.
  2. Roll the spring roll wrapper tightly, sealing the ends securely with flour paste.
  3. Repeat with the remaining ingredients to make 11 more spring rolls.
  4. Heat the oil in a kadhai and deep-fry till they are golden brown. Drain on absorbent paper.
  5. Cut each roll at an angle into two and serve hot.
