Tom Yum Soup is hot and sour soup from Thai Cuisine. This vegetarian version is also delectable. Nothing beats a hot bowl of soup in winter.

Ingredients

3 cups vegetable stock
2 tsp sliced ginger (adrak)
2 stalks lemon grass , sliced
2 whole dry kashmiri red chillies
1 tsp lemon juice
1 carrot , sliced
1 cup chopped tofu
3 tbsp chopped coriander (dhania)
salt to taste

Method
    Method
  1. Bring the stock to boil in a deep pan and add the lemon grass, ginger, lemon zest and chillies, mix well and cover and simmer for 15 minutes.
  2. Add the tofu, carrots and salt, mix well and boil again for 7-8 minutes until carrot is cooked.
  3. Remove from the flame, add the lemon juice, salt and coriander, mix well.
  4. Just before serving, discard the lemon grass and ginger.
  5. Serve hot.
