Tom Yum Soup is hot and sour soup from Thai Cuisine. This vegetarian version is also delectable. Nothing beats a hot bowl of soup in winter.

Makes 4 serving
3 cups vegetable stock
2 tsp sliced ginger (adrak)
2 stalks lemon grass , sliced
2 whole dry kashmiri red chillies
1 tsp lemon juice
1 carrot , sliced
1 cup chopped tofu
3 tbsp chopped coriander (dhania)
salt to taste

- Method
- Bring the stock to boil in a deep pan and add the lemon grass, ginger, lemon zest and chillies, mix well and cover and simmer for 15 minutes.
- Add the tofu, carrots and salt, mix well and boil again for 7-8 minutes until carrot is cooked.
- Remove from the flame, add the lemon juice, salt and coriander, mix well.
- Just before serving, discard the lemon grass and ginger.
- Serve hot.
