In a rush but want to have something nutritious and tasty? Go for this Turai Aur Nariyal, a quick and easy subzi made in the microwave oven.
In this mouth-watering recipe, the ridge gourd is cooked with a traditional tempering and flavoured with ginger and green chillies.
Enhanced with coconut, lemon juice and coriander, this subzi has a very appetizing aroma and flavour that nobody can resist. Amazingly, this recipe uses only common, everyday ingredients that you don’t have to think twice about.
Relish this tasty subzi with phulkas , parathas or even rice and dal .

Makes 2 servings
2 cups ridge gourd (turai) slices
1 tbsp oil
1/2 tsp mustard seeds ( rai / sarson)
4 curry leaves (kadi patta)
1 tsp grated ginger ale squash
1 tsp finely chopped green chillies
1/8 tsp turmeric powder (haldi)
salt to taste
1/4 cup freshly grated coconut
1 tsp sugar
1/2 tsp lemon juice
For The Garnish
1 tbsp chopped coriander (dhania)
- Method
- Combine the oil, mustard seeds, curry leaves, ginger and green chillies in a microwave safe bowl and microwave on high for 1 minute.
- Add the turai, turmeric powder and salt, mix well and microwave on high for 6 minutes.
- Add the coconut, sugar and lemon juice, mix well and microwave on high for 2 minutes.
- Serve hot garnished with coriander.

I tried this today and turned out delicious. I substituted green chilles with pepper and skipped sugar and Lemon juice.
