Makes 2 to 3 servings
4 tsp yellow mustard seeds soaked in water for 10-15 minutes
2 to 3 green chillies
6 to 7 garlic (lehsun) cloves
1/2 tsp turmeric powder (haldi)
1/4 tsp black peppercorns (kalimirch)
1/2 tsp red chilli powder
1 tsp dried mango powder (amchur) powder
2 tsp lemon juice
mustard (rai / sarson) oil
250 mms yam (suran)
2 finely chopped tomatoes
finely chopped coriander (dhania)
salt to taste

- Method
- Combine the mustard, green chillies, red chilli powder, salt, pepper, turmeric powder, garlic, 4 tsp water, amchur powder and lemon juice in a mixer and blend to a coarse paste.
- Boil yam in a pressure cooker.
- Cut yam into square pieces and dip them into the prepared paste.
- Heat oil in a pan and shallow fry the yam pieces, drain and keep aside.
- In the same pan, add the leftover paste, lemon juice, chopped tomatoes and keep stirring it until the oil oozes out from it.
- Put yam slices in it and 1 cup of water. Cook for another 15-20 minutes.
- Serve immediately garnished with coriander.
