A very simple vegetable sandwich. easy to make and digest.
Brinjal Sandwich recipe - How to make Brinjal Sandwich

Makes 1 sandwich
8 brinjal slices
8 tomato slices
8 cucumber slices
2 tbsp chopped green garlic (hara lehsun)
4 tbsp chopped spring onions greens
4 tbsp chopped spring onions whites
salt to taste
1 tbsp olive oil
4 cabbage leaves
4 cheese slices
For Garnish
4 tbsp grated paneer
2 tbsp finely chopped coriander (dhania)
To Serve
tomato soup
To Be Mixed For Dry Masala Powder
2 tsp cumin seeds (jeera) powder
freshly ground black pepper powder to taste
2 tsp rock salt
1 tsp salt
1 tsp dried mango powder (amchur)
1 tsp cardamom (elaichi) powder
1 tsp nutmeg (jaiphal) powder
Method
- Method
- Heat the oil in a pan, add the garlic and onions and saute till onions turn translucent.
- Add the brinjal and salt and saute till the brinjal turns tender and are cooked.
- Remove from the flame and arrange 4 brinjal slices on a clean dry surface.
- Place the tomatoe slices, cucumber and cabbage.
- Again arrange a piece of cucumber followed by tomato and close it with brinjal slice.
- Place a cheese slice on top and grill in a griller till the cheese melts.
- Garnish it with panneer and coriander and sprinkle dry masala powder.
- Serve hot with hot tomatoe soup.
