To make carrot and cheese sandwich, first make the filling by combining carrot, mozzarella cheese, paneer, green chillies, mustard powder, milk and salt. Toast the bread slices and spread ½ tsp melted butter on it. Put 1 portion of the prepared filling in the centre of 1 buttered bread slice and spread it evenly using a back of a spoon. Cover with another buttered bread side facing downwards. Cut the sandwich into 2 triangles. Serve immediately.

Makes 2 sandwiches
For Carrot and Cheese Sandwich
4 toasted whole wheat bread slices
2 tsp melted butter
To Be Mixed Together For The Filling
3/4 cup grated carrot
3 tbsp mozzarella cheese
3 tbsp grated paneer (cottage cheese)
1 tsp chopped green chillies
a pinch of mustard (rai / sarson) powder
1 tbsp milk
salt to taste
- Method
- Divide the filling into 2 equal portions and keep aside.
- Place 2 bread slices on a clean, dry surface and apply ½ tsp of butter on each bread slice.
- Put 1 portion of the prepared filling in the centre of 1 buttered bread slice and spread it evenly using a back of a spoon.
- Cover with another buttered bread side facing downwards. Cut the sandwich into 2 triangles.
- Repeat steps 3 and 4 to make 1 more sandwich
- Serve immediately.

I am vegetarian (e.g., not vegan) so this looked acceptable to me. I am interested in Indian cuisine (flavors, textures, spices) and this hardly seemed authentic', but it was pretty easy. I don't believe it took the advertised fifteen minutes, either. I made the designated two sandwiches, but my wife took one bite and rejected hers - so I ate that and refrigerated the other in a freezer bag (I found the mix to be pretty nice). Surprisingly (since I usually don't like sandwiches-made-with-bread stored in the refrigerator overnight) the texture and flavor of the mix were enhanced the next day!
