Makes 6 rotis
For Carrot and Coriander Roti
1/2 cup grated carrot
1/4 cup finely chopped coriander (dhania)
1/4 cup rice flour (chawal ka atta)
1/4 cup soy flour
1/2 tsp green chilli paste
a pinch of turmeric powder (haldi)
salt to taste
1 tsp oil
rice flour (chawal ka atta) for rolling
oil for cooking

- To make {span class="bold1"}carrot coriander roti{/span}, combine all the ingredients in a deep bowl and knead into a soft dough using enough warm water.
- Divide the dough into 6 equal portions and roll out each portion into a circle of 100 mm. (4”) diameter, using a little rice flour for rolling.
- Heat a non-stick tava (griddle) and cook each roti, using a little oil, till it turns golden brown in colour from both sides.

Add salt to taste. We added 1/4 tsp salt.

Add 1 tsp oil.

Add enough water to make a soft dough. We added 1 1/2 tablespoon water.

Knead into a soft dough.

Flatten the dough and dust it.

Roll out a portion of the dough into a 100 mm. (4") diameter circle using a little rice flour for rolling.

Heat a non-stick tava (griddle) and grease it will little oil.

Place the paratha gently on the tava.

Cook roti for 30 to 45 seconds on a medium flame.

Grease the top of the paratha with oil.

Flip over.

Cook the other side the same way and use a spatula to press down to cook paratha evenly.

Flip and cook till golden brown. Your paratha is ready.
