Ingredients


For Chatpata Rings
1/2 cup maize flour (makai ka atta)
1/4 cup plain flour (maida)
2 tbsp cornflour
1 tbsp oil
salt to taste
plain flour (maida) for rolling
oil for deep-frying

To Be Mixed Together Into A Masala
1 tsp chaat masala
1/2 tsp chilli powder
1 tsp powdered sugar
salt to taste

Method
For chatpata rings

    For chatpata rings
  1. To make {span class="bold1"}chatpata rings{/span}, combine the maize flour, plain flour, cornflour, oil and salt in a deep bowl and knead into semi-soft dough using enough warm water.
  2. Divide the dough into 5 equal portions.
  3. Roll a portion of the dough into a 150 mm (6”) diameter circle using a little plain flour for rolling.
  4. Cut into 8 equal vertical strips using a sharp knife.
  5. Roll each strip into a ring and press to seal the edges.
  6. Heat the oil in a deep non-stick pan and deep-fry a few rings till they turn golden brown in colour from both the sides. Drain on an absorbent paper.
  7. Repeat steps 3 to 6 to make more rings.
  8. Sprinkle the prepared masala evenly over them and toss well.
  9. Cool, serve or store the {span class="bold1"}chatpata rings{/span} in an air-tight container. Use as required.

  1. Falatten the dough on a rolling board and dust with flour.
  2. Roll a portion of the dough into a 150 mm (6”) diameter circle using a little plain flour for rolling.
  3. To prevent the bottom of the rolled dough from sticking to the rolling board, lightly dust the top of the dough with flour, roll it out again gently, and then flip it over.
  4. Cut the rolled dough into 8 vertical strips using a pizza cutter or sharp knife. This will help them stay together when deep frying and prevent them from breaking apart.
  5. Form each strip into a circle (ring) and seal the edges by pressing them together.
  6. Heat the oil in a deep non-stick pan.
  7. Deep-fry a few rings on medium flame. You will have to later fry 4 more batches from the rolled dough.
  8. When frying the chatpata rings, use a spatula to flip them over so that both sides cook evenly.  
  9. Fry till they turn golden brown in colour from both the sides.
  10. Drain on an absorbent paper.
     
  11. Sprinkle the prepared masala evenly over them and toss well.
  12. Cool, serve or store in an air-tight container. Use as required.

Maize flour and corn flour. What is the difference?

   Maize flour is yellowish in colour and is a coarse variety of corn flour.

These chatpata rings are soo good in taste and I make them often over the weekends and then carry them to office and eat for snacks...
