2 tbsp besan (bengal gram flour)
2 tsp chaat masala
1 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1 tsp lemon juice
salt to taste
oil for deep-frying

  1. In a deep bowl, add 3 tbsp besan (bengal gram flour).
  2. Add 1½ tbsp rice flour.
  3. Add 1/4 tsp turmeric powder (haldi).
  4. Add 1 tsp chilli powder.
  5. Add ½ tsp amchur powder.
  6. Add ½ tsp cumin powder.
  7. Add salt to taste.
  8. Add 1 tsp lemon juice.
  9. Add 2 tbsp oil and 3 tbsp of water.
  10. Mix well.
  11. Add 2 cups ladies finger (bhindi), into four lengthwise. Mix well.
  12. Arrange them on a baking tray lined with parchment paper.
  13. Apply little oil over the bhindi using a brush.
  14. Bake in a pre-heated oven at 180°C for 20 minutes till they turn crisp and golden brown in colour.
  15. Remove and cool completely.
  16. Serve kurkuri bhindi immediately garnished with chaat masala.
