For Hari Mirch ka Achar
1 cup green chillies , cut into 1” pieces
1 tbsp fennel seeds (saunf)
2 tsp fenugreek (methi) seeds
1 tsp cumin seeds (jeera)
1 tbsp mustard seeds ( rai / sarson)
1 tsp turmeric powder (haldi)
1/4 tsp asafoetida (hing)
1/4 cup mustard (rai / sarson) oil
1 1/2 tbsp vinegar
2 tsp salt

Also, use hot, medium or less spicy chillies as per your preference, or de-seed the chillies you have to reduce the spiciness.
