  1. To make {span class="bold1"}jhal oats{/span}, wash the oats thoroughly and drain them. Keep aside.
  2. Heat oil in a broad nonstick pan, add mustard seeds, bay leaf, curry leaves, green chillies and sauté for few seconds.
  3. Add peanuts, onions and sauté on medium flame for 2 minutes, while stirring occasionally.
  4. Add tomatoes and mixed vegetables, mix well and sauté on medium flame for 3 to 4 minutes.
  5. Add turmeric powder, jhal muri masala, oats, salt and ½ cup water and mix well.
  6. Cook on medium flame for 4 to 5 minutes, while stirring occasionally.
  7. Add lemon juice and coriander and mix well.
  8. Serve the {span class="bold1"}jhal oats{/span} hot.

  1. To make jhal oats, in a bowl, take 2 cups quick cooking rolled oats.
  2. Add enough water and wash it thoroughly.
  3. Drain and keep aside.
  4. Heat 2 tsp oil in a broad nonstick pan.
  5. Add 1 tsp mustard seeds.
  6. Add 1 bay leaf.
  7. Add 4 to 5 curry leaves.
  8. Add 1 tsp chopped green chillies.
  9. Sauté for few seconds.
  10. Add 2 tbsp raw peanuts.
  11. Add ½ cup finely chopped onions.
  12. Sauté on medium flame for 2 minutes, while stirring occasionally.
  13. Add ½ cup finely chopped tomatoes.
  14. Add ½ cup chopped mixed vegetables.
  15. Mix well and sauté on medium flame for 3 to 4 minutes.
  16. Add ½ tsp turmeric powder. 
  17. Add 2 tsp jhal muri masala.
  18. Add the soaked oats.
  19. Add salt to taste.
  20. Add ½ cup water.
  21. Mix well.
  22. Cook on medium flame for 4 to 5 minutes, while stirring occasionally. 
  23. Add 2 tsp lemon juice.
  24. Add 2 tbsp finely chopped coriander.
  25. Mix well.
  26. Serve jhal oats hot.
