Makes 4 servings
For The Chutney
1 cup chopped coriander (dhania)
1 cup chopped mint leaves (phudina)
2 green chillies
ginger (adrak)
1/4 cup besan (bengal gram flour)
2 tsp lemon juice
salt to taste
For The Stuffing
1 tbsp oil
1 tsp cumin seeds (jeera)
1/2 cup finely chopped spring onions
1/2 cup finely chopped carrots
1/2 cup finely chopped capsicum
1/2 cup finely chopped french beans
1/2 cup finely chopped potaoes
1/2 cup green peas
1/2 cup cauliflower florets
1 tsp garam masala
1 tsp dried mango powder (amchur)
1/4 tsp turmeric powder (haldi)
1 tsp chilli powder
1 1/2 tsp coriander-cumin seeds (dhania-jeera) powder
salt to taste
whole wheat bread slices
butter as required
tomato ketchup as required

- For the Chutney
- Combine all the ingredients and blend in a mixer adding enough water to a smooth paste.
- Keep aside.

- Heat the oil in a pan and add the cumin seeds.
- When the seeds crackle, add the spring onions and saute for 2 minutes.
- Add all the remaining vegetables and salt and cook it till tender.
- Add the remaining ingredients and mix well.
- Remove form the flame and keep aside to cool.

- Apply butter to the bread and then a coat of chutney and then add stuffing and cover it with another bread slice coated with butter and chutney.
- Toast it in a toaster or griller.
- Do apply little butter on top of the bread so that it turns out to be more golden and crisp.
- Serve hot with ketchup.
