Made with a small assortment of ingredients commonly stocked in Rajasthani households, the Mooli Makai ki Roti is not only unbelievably tasty but also perfectly satiating. While traditionally these rotis are flattened by hand on the tava itself, here we have offered an easier way out, which anybody can follow. Just remember to serve these delicious rotis fresh off the tava, with a cupful of steaming hot dal or subzi.

  1. Combine all the ingredients in a deep bowl and knead into a soft dough using enough hot water.
  2. Divide the dough into 6 equal portions.
  3. Roll out each portion of the dough between two sheets of plastic into a 125 mm. (5") diameter circle.
  4. Heat a non-stick tava (griddle) and cook each roti, using a little oil, till they turn golden brown in colour from both the sides.
  5. Serve immediately.

  1. In a deep glass bowl put 1 cup maize flour (makai ka atta).
  2. Add 1/2 cup grated white radish (mooli).
  3. Add 1 tsp ginger-garlic (adrak-lehsun) paste.
  4. Add 1 tsp chilli powder.
  5. Add 1 tbsp oil.
  6. Add salt to taste. We added

simple and nice.. these parathas are a great variation the the classic Makai ki Roti and also the addition of mooli makes it healthy... great way to trick children and all those who would refuse to eat mooli... it tastes good..
