To make spinach garlic and cheese tava sandwich, heat the butter in a small non-stick pan, add the garlic and sauté on a medium flame for 2 minutes. Keep aside. Place a bread slice on a clean, dry surface and put 1½ tbsp of cheese evenly over it. Put 2 tbsp of the spinach evenly over the cheese. Put half the butter-garlic mixture evenly over it and sprinkle little salt and pepper evenly over it. Sprinkle 1 tbsp of cheese evenly over this. Cover the sandwich with another bread slice and apply ½ tsp of mayonnaise evenly over it. Heat a non-stick a tava (griddle), place the sandwich on it with the mayonnaise side facing downwards, apply ½ tsp of mayonnaise on the side facing upwards and cook on a medium flame till it turns golden brown in color from both the sides. Transfer to a clean dry surface. Cut the sandwich diagonally into 2 equal portions. Repeat steps 2 to 8 to make 1 more sandwich. Serve immediately with tomato ketchup. 4 tbsp blanched and chopped spinach (palak)
1 tbsp finely chopped garlic (lehsun)
5 tbsp grated processed cheese
1 tbsp butter
4 bread slices
salt and to taste
2 tsp mayonnaise
For Serving With Spinach , Garlic and Cheese Tava Sandwich

- Method
- Heat the butter in a small non-stick pan, add the garlic and sauté on a medium flame for 2 minutes. Keep aside.
- Place a bread slice on a clean, dry surface and put 1½ tbsp of cheese evenly over it.

The leaves should look fresh and tender, and not be wilted or bruised.

Avoid those that have a slimy coating as this is an indication of decay.
- Also check for dirt especially in between the thick stems.
How to select garlic

Try to pick out sturdy crisp pods of garlic which do not appear wilted.

Further the garlic pods should not be soft on touch.

You should also check for mould and mildew on the garlic.

The garlic pods should not have any black, yellow or green spots. That is an indication of spoilage.
How to blanch spinach

To blanch spinach, take a bunch of spinach. Choose spinach that has vibrant deep green leaves and stems with no signs of yellowing. The leaves should look fresh and tender, and not be wilted or bruised. Avoid those that have a slimy coating as this is an indication of decay.

Removing the stems and discard them.

Wash the leaves thoroughly under running water or in a bowl full of water. This will help in getting rid of the dirt residues on the leaves.

Drain well using a strainer. Take approx. 1½ cups of roughly chopped spinach.

Take a deep pan, add water to it and put it for boiling.

Add salt. My mother says that adding salt while boiling vegetable helps in cooking the vegetable faster as salt raises the temperature of the water and it also retains the color.

Once the water comes to boil, add the chopped and washed spinach leaves.

Mix well and cook for 2-3 minutes. Till the spinach gets tender. Do not over cook the leaves as it might loose the color. Switch off the flame.

Drain the water using strainer. Throw the water away.

Plunge the leaves in a bowl of ice cold water. This step is known as refreshing, it is done to retain the colour of the spinach and it also halts the process of cooking.

Once again drain well using a strainer.

Squeeze out remaining water wrom the leaves with your hands to get rid of excesse water and discard. You will get approx. 4 tbsp of blanched and chopped spinach.
