For Vegetable Chapati Roll
8 chapatis (7") each
4 tsp red chilli sauce
To Be Mixed Into A Stuffing
1/4 cup finely chopped cucumber
1/4 cup deseeded and finely chopped tomatoes
2 tbsp finely chopped coriander (dhania)
1/4 cup grated carrot
1/4 cup finely chopped capsicum
1/2 cup shredded lettuce
1/4 cup finely chopped spring onions whites and greens
1 tbsp tomato ketchup
2 tbsp mayonnaise
2 tbsp cheese spread
salt to taste

For the chapati – Skip if you know
- Combine 1 1/3 cup whole wheat flour, 1.5 tsp oil , salt to taste in a deep bowl and knead into a soft dough using enough water.
- Divide the dough into 8 portions and roll out each portion of the dough into a 150 mm. (6”) diameter thin circle using a little whole wheat flour for rolling.
- Heat a non-stick tava (griddle) on a high flame and when hot, place the roti gently over it.
- Cook it till small blisters appear on the surface. Turn over the roti and press all over lightly using a muslin cloth till it puffs up. Keep aside.
For making the chapati roll stuffing
- In a deep bowl, take finely chopped cucumber.
- Add deseeded and finely chopped tomatoes to it.
- Then add finely chopped coriander.
- Now add grated carrot. Skip adding vegetables that you dislike or are not available.
- Add finely chopped capsicum. You can also use red and yellow bell pepper.
- Now add shredded lettuce. To make the lettuce crunchy, dip the leaves in ice-cold water and then shred it.
- Finally, add chopped spring onions whites and greens. Along with all these colourful and crispy vegetables, you can also toss in paneer cubes to make it protein-rich.
- Add tomato ketchup. If you don’t want the mixture to be tangy but spicy then add red chilli sauce or sriracha.
- Then add mayonnaise, cheese spread and salt to taste. They give the stuffing a creamy mouthfeel.
- Divide the stuffing into 8 equal portions. Keep aside.

This roll is a great snack recipe that I make often, It is easy and quick to make...the filling is loaded with lots of vegetables and the mayo and the cheese spread make it more interesting...
