For The Chapatis
1 cup whole wheat flour (gehun ka atta)
1 tsp oil
salt to taste

For The Spicy Potato and Green Pea Stuffing
2 tsp finely chopped green chillies
1 1/2 cups mashed boiled potatoes
1 cup boiled and coarsely crushed green peas
1 tbsp oil
1 tsp cumin seeds (jeera)
1/2 tsp ginger (adrak) paste
1/2 cup finely chopped onions
2 tsp chaat masala
1 tsp garam masala
1 tsp dried mango powder (amchur)
2 tbsp finely chopped coriander (dhania)
1 tsp lemon juice
salt to taste

Other Ingredients
oil for cooking
8 tbsp grated processed cheese

Method
For the chapatis

  1. Combine all the ingredients in a deep bowl and knead into a soft dough using enough water.
  2. Divide the dough into 8 equal portions.
  3. Roll a portion of the dough into a 150 mm. (6”) diameter circle using a little whole wheat flour for rolling.
  4. Heat a non-stick tava (griddle), cook the chapatis using a little oil till both sides turn light brown in colour.
  5. Repeat steps 3 and 4 to make 7 more chapatis. Keep aside.

For the spicy potato and green pea stuffing

  1. Heat the oil in a broad non-stick pan and add the cumin seeds.
  2. When the seeds crackle, add the ginger paste, green chillies and onions and sauté on a medium flame for 1 minute.
  3. Add the potatoes, green peas, chaat masala, garam masala, dry mango powder, coriander, lemon juice and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside.

  2. Place a portion of the spicy potato and green pea stuffing at one end, top it with 1 tbsp of cheese evenly over it.
  3. Roll it up tightly.
  4. Heat a non stick tava and grease it using 1/2 tsp oil and place few rolls at a time and cook on medium flame for 2 minutes till golden brown from all the sides, using little oil for cooking.
  5. Repeat steps 2 and 4 to make 7 more wraps. Cut it diagonally into half.
  6. Serve the chapati rolls stuffed with spicy potatoes immediately.

  17. Cook on a medium flame for 2 minutes, while stirring occasionally.
