For Vegetable Jalfrezi
1/2 cup diagonally cut and parboiled baby corn
1/2 cup diagonally cut and parboiled carrot
1/2 cup diagonally cut and parboiled french beans
1/2 cup parboiled cauliflower florets
2 tbsp oil
1 tsp cumin seeds (jeera)
1/2 tsp ginger (adrak) paste
1 tsp garlic (lehsun) paste
1/2 cup thinly sliced onions
1 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1 tsp coriander-cumin seeds (dhania-jeera) powder
1 tsp garam masala
1/2 tsp dried fenugreek leaves (kasuri methi)
salt to taste
1/4 cup fresh tomato pulp
1 tbsp finely chopped coriander (dhania)
For vegetable jalfrezi
- For vegetable jalfrezi
- To make {span class="bold1"}vegetable jalfrezi{/span}, heat the oil in a deep non-stick kadhai, add the cumin seeds, ginger paste and garlic paste and sauté on a medium flame for a few seconds.
- Add the onions and sauté on a medium flame for 2 minutes.
- Add all the vegetables, chilli powder, turmeric powder, coriander-cumin seeds powder, garam masala, dried fenugreek leaves, salt and 1 tbsp of water and mix well. Cover with a lid and cook on a medium flame for 3 minutes, while stirring occasionally.
- Add the fresh tomato pulp and coriander, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
- Serve the {span class="bold1"}vegetable jalfrezi{/span} hot.

To make vegetable jalfrezi recipe | Punjabi vegetable jalfrezi sabzi | restaurant style vegetable jalfrezi | we are using an assortment of vegetables like baby corn, carrot, French beans and cauliflower. We have cut them diagonally and par boiled them.

How to make veg jalfrezi

To cook mixed vegetable jalfrezi, heat the oil in a deep non-stick kadhai and add the cumin seeds.

Add ginger paste.

Add garlic paste.

Mix well and sauté on a medium flame for a few seconds or until the raw aroma vanishes.

Add the onions.

Sauté on a medium flame for 2 minutes or until the onions are soft and pink.

Add all the other vegetables starting with diagonally cut and parboiled baby corn. If you do not find baby corns, make use of sweet corn kernels.

Add diagonally cut and parboiled french beans. To make it more nutritious , you can add in protein in the form of paneer or soya nuggets.

Add parboiled cauliflower florets. Other vegetables like broccoli florets, green peas, potato, capsicum, bell peppers can also be added if you like.

Add chilli powder. The vegetable jalfrezi is supposed to be mildly spicy but you can adjust the quantity as per your preference.

Add turmeric powder.

Add coriander-cumin seeds powder.

Add garam masala. Adjust the spice levels to suit your taste.

Add dried fenugreek leaves.

Add 1 tbsp of water and mix well. The water prevents the spices from burning.

Cover with a lid and cook on a medium flame for 3 minutes, while stirring occasionally. Do not overcook as you want the veggies to retain their crunch.

Add the fresh tomato pulp. If you do not have tomato pulp handy, make use of tomato ketchup to provide the vegetable jalfrezi the much needed tangy flavor.
