Watermelon and Mint Drink

This easy and quick juice is a wonderfully refreshing energiser. Watermelon is rich in water and fibre, which makes it a perfectly heart-friendly, low-fat ingredient.
Pineapple too is a low-fat fruit, rich in nutrients and fibre. This makes the sweet and tangy duo a wonderful pair for your breakfast!
In this delicious Watermelon and Mint Drink, the fibre is retained because we do not strain the juice. When combined with chopped mint, both the flavour and mouth-feel of this juice get a perky uplift... an effect that is sure to be passed on to you as well!

Makes 3 glasses
3 cups roughly chopped chilled watermelon (tarbuj)
1/4 cup roughly chopped chilled pineapple
1 tsp sugar
1 tbsp chopped mint leaves (phudina)
- Method
- Combine all the ingredients, except the mint leaves in a blender and blend till smooth.
- Transfer the mixture in a bowl, add the mint leaves and mix well
- Pour equal quantities of the drink into 3 individual glasses and serve immediately.

It''s dominating with the flavour of watermelon but I think pineapple is needed in this drink to give that necessary body and texture. Sugar can be completely avoided, i feel. The mint hasn''t been blended, but chopped and added later... it gives very good mouthfeel and taste.
